Parisian Sandwich with Arugula Salad- April 22, 2010

Last week we ate lunch at French Memories Cafe in Duxbury. My husband had a Parisian sandwich, which consisted of a fresh baguette, butter, pit ham and cornichons (tiny gherkins pickles). It was so simple and delicious, we decided to try our own version. I had trouble finding whatever the type of pit ham they used there was (although in retrospect I probably could have bought it there...) so we used coppa ham and prosciutto instead. Served with a simple green salad, it was ALMOST as good as the French Memories version.
