Grilled Chicken Breasts and Chipolte-Cilantro Carrots with Feta- May 25, 2010

This is an epicurious recipe that was light, healthy and delicious. Chipolte chilis are delicious, but I've made the mistake of using way to many of them before. Warning: they are VERY spicy! They are usually packed in adobo and canned. This recipe called for very little, so I was sure to rinse off the adobo, de-seed the pepper and I used probably less than half of just one of them. It added exactly the kick and flavor the carrots needed.

Red Quinoa, Brown Rice & Chicken Salad- April 6, 2010

Whole Foods was handing out a little spring magazine which is where I found this recipe. Quinoa is yummy and very good for you, as is brown rice. I don't usually make brown rice because it takes so long to cook, but I discovered Whole Foods carries it frozen. You just microwave it for two minutes and its done! This recipe was vegetarian but I added some rotisserie chicken. Basically you had the rice, quinoa, chicken, some asparagus, canned artichoke hearts, feta cheese and then you added a light vinaigrette to that. It was very yummy as a side or a main.
