Chicken Breasts with Prosciutto and Sage and Grilled Asparagus- April 23, 2010
Using up the rest of the prosciutto from last night as well as some asparagus, this was a quick and easy meal. I like to grill asparagus or roast it unless its going into a pasta I might blanch it.

Tilapia and Mashed Yams with Pancetta-Sage Breadcrumbs- February 18, 2010
Last night I made tilapia and mashed yams with pancetta-sage breadcrumbs. I actually used catfish. The yams were particularly yummy, but the collard greens that accompanied it took the cake. I boiled them for about 5 minutes, drained them and sauteed them in a little olive oil, unsalted butter, garlic & lemon juice for about 2 minutes.
We drank 2008 Stump Jump Shiraz, which is really for tonight's dinner but we didn't have any white.
