Quinoa & Chorizo Stuffed Peppers- May 11, 2010
I love stuffed peppers as a meal.  You can usually make them ahead and pop them in the over (although they do take a while in there).  This is a Whole Foods recipe that contains all sorts of wonderful things for your body.  Of course I had to go and add chorizo sausage to it, but not very much.  These were delicious and you don't need your V8 when you have one of these!
