Tuna Nicoise Salad- March 12, 2010

Can you tell I'm ready for spring? I've been glad to shed the heavier dishes of winter this past week and embrace the lighter fare of spring. Actually Epicurious has a whole spring recipes screen up on their iPhone app that I find ridiculously exciting. I love Nicoise salad and I usually prepare it in the deconstructed way. Tonight I used blanched green beans, cherry tomatoes, Kalamata olives, hard boiled egg, boiled baby red potatoes, spring greens and of course some seared fresh tuna. I tossed the greens with a simple vinaigrette of red wine, olive oil & Dijon mustard and drizzled the rest with it as well. Light, simple and delicious.
